Although the idea of treating your special someone to a romantic, home-cooked meal on the water may seem intimidating, it doesn't need to be. With a little extra preparation and a few finely executed shortcuts, you'll easily be able to plan and serve a flavorful meal in the most romantic of surroundings. Whether the occasion is Valentine's Day, an anniversary or simply an eagerly anticipated date night, this will be a pontoon boat celebration to remember.

CELEBRATORY SALMON FILLETS

  • Ingredients:
  • 1½ pounds of fresh salmon fillets
  • lemon pepper
  • garlic powder
  • salt
  • ⅓ cup water
  • ¼ cup vegetable oil
  • ⅓ cup soy sauce
  • ⅓ cup brown sugar

You'll need to start preparations for this dish at home.

First, season the salmon with lemon pepper, garlic powder and salt, and then set the fillets aside. Next, mix the vegetable oil, water, brown sugar and soy sauce in a small bowl. Once the sugar has dissolved, place the mixture and the salmon into a large resealable plastic bag and allow to marinate in the refrigerator for at least a couple of hours. Then put the bag into a cooler for the ride to your chosen al fresco dining location.

Once you've dropped the hook or have tied up to shore, preheat your rail-mounted grill for medium heat. Lightly brush the grill grate with olive oil, place the salmon fillets on the preheated grill and discard the remaining marinade. Cook the salmon for 6-8 minutes per side. If the fish flakes easily with a fork, you'll know it's ready.

A Few Additional Suggestions for Your Big Night:

  • Prepare a few simple tapas in advance; they'll tease the taste buds and whet the appetite while you're en route to your dining destination or are enjoying the evening's golden light prior to the main course.
  • Salads are great side dishes for a meal on the water. You can prepare them in advance, and better yet, you won't need to keep them warm or attempt to heat them up on site. We suggest a tomato-and-cucumber salad, either drizzled with balsamic vinaigrette or dusted with salt and pepper. Cold pasta or rice salads also are excellent choices; you can make your own or purchase a delicious, ready-made dish in your local deli or grocery store.
  • Pack some fresh croissants or French bread to round out the meal. Don't forget the spreads — butter, hummus or even a soft cheese like brie or Camembert.
  • Last but not least: dessert. Fresh strawberries and a container of chocolate sauce for dipping will win anyone's heart.
