Whether you're pontoon boating on an inland lake, reservoir, river or big-water harbor, the joy and relaxation you experience likely will evoke images of palm trees, warm sand and turquoise water, with a steel-drum soundtrack in the background.
You don't have to leave Margaritaville to your dreams. You can bring a taste — literally — of the islands to your pontoon boat adventures. The next time you plan a barbecue with your family and friends, add an extra dish to ribs, pulled pork and baked beans.
Our Island-Style Grilled Chicken recipe includes both Caribbean- and South Pacific-island influences, and we guarantee that you'll never look at grilled chicken the same way.
Ingredients:
2 pounds chicken, cut into pieces
½ cup lemon juice
½ cup soy sauce
1 tablespoon minced garlic
1 tablespoon minced ginger
½ teaspoon brown sugar
crushed chili peppers — to taste
Combine marinade ingredients in a saucepan and simmer until the sugar dissolves. Cool, and marinate the chicken overnight. Once you're at your pontoon barbecue, grill the chicken over medium heat until thoroughly cooked. Serve with fresh pineapple slices.
Great side dishes for your island-style pontoon barbecue:
- Cantaloupe-and-honeydew salad: Use a melon-baller, chill and bring along in your cooler.
- Plantains: Grill, then drizzle with olive oil and salt to taste. Serve hot!
